Hei lovelies!
I know that sweet potato has a little different taste which (in my opinion) people absolutly like or absolutly not :D
For those of you who do like it and who need an easy (well not that fast because it takes some time in the oven) but healthy and delicious lunch or dinner, I will today share this baked sweet potato recipe with various fresh and easy stuffings! You can change your stuffings as you want and how you like it the most! Although it is pretty simple, this dish gives you so many healthy carbs and will absolutly fill you up!
And, extra plus point: sweet potoatoes look so gorgeous when they are cooked! #colorful!
Here is how to do it, enjoy! :)
Ingredients for 2 servings:
- 2 medium/large sweet potatoes
My stuffings:
- 2 tomatoes
- 1 green onion
- 200 grams of corn
- 50 ml balsamic vinegar
For the guacamole:
- 1 ripe avocado
- 1 fresh lemon (or lemon juice from a bottle)
Also:
- salad of your choice for the greens ;)
- Salt and pepper to taste
How to do it:
With a fork, sting 4-5 times into the raw sweet potato (like this, the water can evaporate easily afterwards) and put in the oven at 220 degrees celcius for about 40-50 minutes, depending on size.
While the sweet potato is baking, cut your veggies and marinate with balsamic vinegar and seasonings. Mash your avocado, mix it with the juice of half of the lemon, salt and pepper and set aside.
Once your sweet potato is done (it should be soft when you press a fork on top) place your salad in a bowl, cut your sweet potato in half and season with salt and pepper. Fill it with your veggies and the guacamole and enjoy!
Tipp: Use the second half of the lemon juice for your sweet potato, it tastes very good :)

Hallo meine Lieben!
Ich weiss, dass Süßkartoffel einen etwas anderen Geschmack hat den man (meiner Meinung nach) entweder sehr gerne oder überhaupt nicht mag :D
Für die unter euch, die ihn mögen und ein einfaches, zugegeben nicht allzu schnelles wegen der Zeit im Ofen, dafür aber sehr gesundes und leckeres Rezept zum Mittag oder Abendessen gebrauchen können teile ich heute mit euch dieses Rezept für eine gebackene Süßkartoffel die sich mit diversem frischem Gemüse füllen lässt! Dabei seid ihr ganz frei welches Gemüse euch am besten schmeckt. Obwohl dieses Rezept an Einfachheit schwer zu übertreffen ist enthält es so viele gute Kohlenhydrate und wird euch so wirklich lange satt machen!
Extra Plus Punkt: Süßkartoffeln haben eine SO tolle Farbe wenn sie gekocht sind, das macht direkt noch mehr Spaß beim essen! #colorful
Viel Spaß beim nachkochen :)
Zutaten für 2 Portionen:
- 2 mittlere bis große Süßkartoffeln
Meine Füllung:
- 2 Tomaten
- 1 Frühlingszwiebel
- 200 g Mais
- 50 ml Aceto Balsamico
Für die Guacamole:
- 1 reife Avocado
- 1 Zitrone
Ausserdem:
- Salat eurer Wahl (für das Grünzeug)
- Salz und Pfeffer
Und so wirds gemacht:
Stecht mit einer Gabel 4 bis 5 mal in die rohe Süßkartoffel, so kann der Wasserdampf nachher besser entweichen. Legt diese anschließend auf ein Backblech mit Backpapier und backt sie bei 220 Grad Celsius für ca. 40-50 Minuten im Ofen (je nachdem wie groß sie sind). Während die Süßkartoffel gebacken werden, schneidet euer Gemüse klein und mariniert das ganze mit Balsamico Essig, Salz und Pfeffer. Zermatscht die Avocado zusammen mit dem Saft einer halben Zitrone sowie ebenfalls Salz und Pfeffer und stellt diese beiseite.
Wenn die Süßkartoffeln fertig sind (sie sollten auf Druck leicht nachgeben), gebt euren Salat in eine Schüssel, schneidet die Süßkartoffel auf, würzt diese mit Salz und Pfeffer und füllt sie mit eurem Gemüse sowie der Guacamole. Nich schön anrichten (das Auge isst ja bekanntlich mit) und genießen! ^.^
Tipp: Benutzt die zweite Hälfte des Zitronensaftes für die Süßkartoffel, zusammen schmeckt das sehr gut! :)
